INTRODUCING NICOLAS LEGENDRE
Group Executive Head Chef
Ushering in a new chapter in the Richardson group and looking to help take the business onward and upwards, is Nicolas Legendre the New Executive Head Chef for The group.
Nicolas, a traditional Frenchman has the French passion and love for cuisine. French cuisine is lauded across the world and for good reason, making it the ideal place for any serious chef to learn and craft his art form. Nicolas being no different took his newly acquired skills and honed them as he travelled the world tailoring his French technique to suit the various cuisines from around the world.
He settled in England in the late ’90s and found a home in Somerset and then on to work for the world-famous chef Malcolm Cowan at the highly exclusive Old Plow in Spleen, Buckinghamshire. The hang out of many well-known faces, Mary Berry exclaimed it was “her favourite restaurant”, and Jeremy irons stated “the best food within an hour of London” There have been many other famous faces walking through the doors including Jamiroquai who was a regular patron and fellow chef Jamie Oliver also enjoyed dining there.
However, none quite as famous as the next lady in question, Nicolas who has not only had the honour of being presented to the Queen but has also cooked for Her Royal Highness twice along with Prince Phillip and also led the kitchen in cooking for Prince Charles, Princess Anne and Prince William. As well as several other highly regarded royals, dignitaries and military personnel. Whilst holding the title of executive head chef at The Britannia Royal Naval College at Dartmouth.
It certainly isn’t a secret that the last 10 months have been a challenge for the group after entering into voluntary administration in January 2018. Along the way it has taken the hard work, perseverance and resilience of the entire team and some business savvy decisions by Company owner Keith Richardson to bring 3 of the hotels out of administration on The 1st of November 2018. The final hotel will exit administration early next year.
So what can we expect from this super chef whose last position was managing the trading operations at the beautiful Lost Gardens of Heligan Nicolas is extremely passionate in taking the group to new heights; he is working hard currently designing new menus across the group. He will be focusing on traditional cuisine, with high importance on top quality, local produce. He is also keen to ensure that the group becomes a training hub for chefs within the industry as the place to learn.
One thing is for sure new exciting challenges are on the horizon and with Nicolas as part of the team we will be in for a real culinary revolution with this man at the helm.
